Vietnamese Sweet Pork (Thit Lon Nau Caramen Kieu Vietnam)

Ingredients

  • 50 g Palm or golden granulated sugar
  • 2 tablespoons Water
  • 500 g Lean leg of pork, cubed
  • 1 Mooli radish, about 30 cm (12 inches) long, peeled and thinly sliced
  • 1 teaspoon Pepper
  • 1 Shallot, chopped
  • 100 ml Vietnamese fish sauce

Instructions

  1. Gently heat the sugar with the water in a heavy based casserole until the sugar is dissolved and the mixture is beginning to thicken and caramelize a little.
  2. Add the pork, sliced radish, pepper and shallot.
  3. Top up the casserole with water, level with the ingredients.
  4. Add the fish sauce, stir and bring to the boil.
  5. Reduce the heat to a simmer, cover and continue to simmer for 1 – 1 1/2 hours, until pork is tender and cooked through.
