Vietnamese Sweet Pork (Thit Lon Nau Caramen Kieu Vietnam)

Ingredients
- 50 g Palm or golden granulated sugar
- 2 tablespoons Water
- 500 g Lean leg of pork, cubed
- 1 Mooli radish, about 30 cm (12 inches) long, peeled and thinly sliced
- 1 teaspoon Pepper
- 1 Shallot, chopped
- 100 ml Vietnamese fish sauce
Instructions
- Gently heat the sugar with the water in a heavy based casserole until the sugar is dissolved and the mixture is beginning to thicken and caramelize a little.
- Add the pork, sliced radish, pepper and shallot.
- Top up the casserole with water, level with the ingredients.
- Add the fish sauce, stir and bring to the boil.
- Reduce the heat to a simmer, cover and continue to simmer for 1 – 1 1/2 hours, until pork is tender and cooked through.
