Vietnamese Clear Bean Curd Soup (Canh Dau Hu)

Ingredients

  • 1 tablespoon Chopped fresh coriander (cilantro) leaves
  • 1/2 cup Chopped cooked chicken
  • 2 squares Fresh bean curd
  • 2 cups Chicken stock

Instructions

  1. Chill stock and remove fat from surface.
  2. Bring stock to boil.
  3. Add bean curd and chicken.
  4. Heat through.
  5. Sprinkle with coriander leaves
  6. Serve immediately while soup is still hot.
