Ingredients
- 45-50 Bamboo skewers
- 1 kg Pork shoulder
- 125 ml Tomato or banana ketchup
Marinade :
- 3 tablespoons Lime juice
- 6 cloves Garlic, chopped
- 150 g Dark brown sugar or palm sugar
- 125 ml Vinegar
- 125 ml Soy sauce
- 250 ml Clear soft drink such as 7-up or Sprite
Instructions
- Soak the bamboo skewers in water for 30 minutes then set aside.
- To prepare the Marinade, combine lime juice, garlic, sugar, vinegar, soy sauce and soft drink in a bowl and set aside.
- Cut the pork into bite-sized pieces. Marinate pork in mixture for 8 hours or overnight in the refrigerator.
- Drain the meat and reserve Marinade. Thread 4-5 pieces of meat onto each skewer.
- Heat griller and grill pork over medium-low heat, for about 3-5 minutes on each side or until lightly browned.
- Meanwhile, place the Marinade in a wok and bring to the boil. Simmer for 3-5 minutes.
- Remove from heat and blend in tomato or banana ketchup, stirring until smooth.
- Brush both sides of the skewered pork with the reserved Marinade.
- Continue grilling until pork is completely cooked and browned on both sides.
- If desired, reheat the Marinade and serve as a dip.
