Snails Stuffed with Minced Pork (Oc Buoc Nhoi Thit)

Ingredients

  • 82 kg Snails, cleaned
  • 100 g Minced pork
  • 25 g Wood ear fungus, soaked to soften and finely chopped
  • 1 tablespoon Shallot, finely chopped
  • 1 teaspoon Garlic, finely chopped
  • 1 teaspoon Ginger, finely chopped
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground white pepper
  • 1/2 teaspoon Sugar
  • 12 stalks Lemon grass, or 12 ginger leaves

Instructions

  1. Boil snails for 5 minutes then shell, cleaned and mince.
  2. Reserve shells.
  3. Mix minced snails with minced pork, wood ear fungus, shallot, garlic, ginger, salt, pepper and sugar.
  4. Insert a small length of lemon grass or a ginger leaf into snail shells.
  5. Stuff meat mixture into shells and steam for 10 minutes over high heat.
  6. Serve with nuoc cham dipping sauce.
